Shish Tawook Grilled Chicken

In any Middle Eastern restaurant, you may get delicious grilled chicken skewers called shish tawook. They taste just as good—if not better—if you prepare them yourself. It’s really easy! The yogurt helps to tenderize the meat, so resist the urge to replace it with sour cream.


  • ¾ cup plain yogurt
  • ¼ cup lemon juice
  • ¼ cup vegetable oil
  • 4 cloves garlic, minced
  • 2 teaspoons tomato paste
  • 1 ½ teaspoons salt
  • 1 teaspoon dried oregano
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground cinnamon
  •  teaspoon ground cardamom
  • Two pounds of boneless, skinless chicken breast halves, divided into two-inch pieces
  • 2 onions, cut into large chunks
  • 1 large green bell pepper, cut into large chunks
  • 1 cup chopped fresh flat-leaf parsley

Step 1.

In a big bowl, combine yogurt, lemon juice, oil, garlic, tomato paste, salt, pepper, oregano, allspice, cinnamon, and cardamom. Toss in the chicken to coat, then transfer to a plastic bag that can be sealed, pressing out any extra air.For four hours, let it marinade in the refrigerator.

Step 2.

Heat an outside grill to medium-high and quickly grease the grates.

Step 3.

Put bell pepper, onions, and chicken on metal skewers.

Step 4.

Cook for about 5 minutes on each side, or until chicken is golden and no longer pink in the center, on a hot grill. Drizzle the skewers with parsley.
